Born in Mexico and migrating to the United States in 1976, Miguel Mercado’s journey is one filled with passion for culinary excellence. His foray into the food industry began at a coffee shop, where he discovered his innate talent and love for cooking. Fueling his passion, Miguel pursued a Bachelor’s degree in Culinary Arts, laying the foundation for a remarkable career ahead. From bustling cities like Los Angeles to vibrant locales like Dallas and Las Vegas, Miguel’s culinary prowess led him to diverse roles, from Executive Chef to General Manager. It was in Las Vegas where his dream took flight as he opened his first Cajun and Creole restaurant, Fish King Grill, in 2017. Specializing in the vibrant flavors of Louisiana cuisine, Miguel’s restaurant quickly gained acclaim for its dedication to quality ingredients and authentic taste. However, as life often unfolds in unexpected ways, Miguel and his family eventually decided to return to the Dallas/Fort Worth area, bringing with them the essence of Cajun and Creole cuisine. Thus, Cajun Fish Grill was born—a testament to Miguel’s unwavering commitment to providing a family-friendly dining experience where every guest feels at home. At the heart of Cajun Fish Grill lies Miguel’s culinary philosophy: to use only the freshest and finest ingredients, ensuring each dish bursts with flavor and authenticity. With nearly three decades of marriage and four children to his name, Miguel finds joy not only in the kitchen but also in the warmth of family life.
