HSL Restaurant, sister restaurant to Park City’s HANDLE and brought to Salt Lake by Executive Chef Briar Handly, Melissa Gray, and Meagan Nash, is a beauty of a spot that pushes all the right buttons. I had the chance to visit HSL for dinner last Saturday during their soft opening and was invited to a media event last night and the food, cocktails, and atmosphere haven’t strayed far from my mind since we first stepped through the door.

The bar program is being established by seasoned SLC cocktail expert, Scott Gardner. After following his moves around restaurants and bars in the city *[always a little too late]*, I finally got the chance to try his cocktails and they did not disappoint. No one is doing cocktails like Scott’s. The Bourbon + Black Tea + Clarified Milk, Mezcal + Epazote + Palm Sugar, Brandy + Pistachio + Mint cocktails were unbelievable. I could talk for days about his level of booze enthusiasm and geekery and I can’t wait to see what comes next out of HSL’s bar.

**Red Butte Garden and Arboretum** is one of the largest botanical gardens in the Intermountain West, a regional center for plant-focused science education, conservation and research, and cultural enrichment. As part of a state arboretum that encompasses the University of Utah campus, the Garden cultivates an essential urban forestland of about 2,000 trees in 456 different taxa. Fresh, Responsible, Sustainable Tsunami flies fresh seafood in daily from around the world and we focus on serving fish that is seasonally available to ensure absolute freshness and quality. Our wild salmon is caught from a single family-owned boat out of Petersburg, Alaska, and shipped directly to Tsunami. Tsunami is a member of Strawless SLC. Straws that are provided (upon request) are biodegradable, and water is also served only when requested. All to-go containers and to-go bags are made from compostable materials and Tsunami recycles glass at our Sugar House, Union Heights and South Jordan locations. In 2009, Tsunami was the first restaurant in Utah to stop serving blue fin tuna. The vast majority of our seafood is from sustainable, renewable stock.
