The Palio, our namesake, is a celebrated Italian horserace that runs through Siena, Italy twice each year and is the inspiration for our robust food and spirits. Palio is not just a restaurant, it’s a way of life! Palio is bold, vibrant, and embodies the spirit of The Palio di Siena horse race. It is full of life, emotions and energy. Our menu is also bold, vibrant and full of character with a profusion of flavors in our chef-inspired cuisine. Her love for baking began at a young age, inspired by her mother’s ability to create joy through sweet treats and suppor the family during difficult times.  
Vanessa believes that baking is not just about following a recipe; it's about making memories and connecting with others. In her classes, she fosters a warm and welcoming atmosphere, encouraging participants of all skill levels to express their creativity and enjoy the process.
