After owning a business in Utah and successfully pioneering a restaurant and sports bar in California for 12 years, coupled with many years of researching the distillery business, we were ready to take the big leap to fulfill our longtime dream of opening our own distillery. Radu enjoyed distilling spirits as a young boy with his grandpa in his home country of Romania, and had his mind set on distilling professionally someday.  
  
As Utah residents for more than 26 years, starting our next venture in our home state was a logical decision. We found Utah to be a beautiful state, a wonderful place to raise our family with its welcoming and friendly residents with a strong sense of community, and an inviting place for entrepreneurship.  
  
Our hearts and souls are immersed in Eight Settlers and finally, after so many years of planning, we have been about to see our carefully crafted dream materializing. It has been an emotional and priceless journey for both of us and we embrace the opportunity to share it.

Eight Settlers Distillery

Secluded in pine trees, The Hog Wallow Pub is located kitty-corner to the historic Old Mill ruin at the base of Big Cottonwood Canyon. It is the latest reincarnation of the oldest and most notorious bar in the Cottonwood Heights area. Established in 1947 by a returning World War II veteran who converted an abandoned Civilian Conservation Corps bunkhouse into an out-of-the-way watering hole he named "The Branding Iron". Over the years the bar has changed names a number of times most notably, The Wagon Wheel, Demete's, The Fox and Bottle Inn and D. J.'s Beer Garden. In 1997 the bar was transformed by Keith Biesinger, into The Hog Wallow Pub. Since it's opening, Hog Wallow has received a number of awards including: City Search's "Best Outdoor Bar," City Weekly's "Best Neighborhood Bar" and "Best Escape From Downtown," and Salt Lake Magazine's "Best Suburban Bar." Most recently 2010 City Weekly proclaimed us the "Best bar to find your fathers name carved in the ceiling" and in 2011 we received Salt Lake Magazine's Best of the Beehive award for "Best Patio." To reach Big Cottonwood Canyon from Salt Lake City, take I-215 to the 6200 South "Canyons" exit and then continue east on U-152, following signs to Solitude and Brighton. This 15-mile scenic byway takes about one hour round trip. From the main road, this canyon narrows almost immediately into dramatic alpine scenery. This 15-mile drive provides access to excellent hiking, fishing, picnicking, rock climbing, and camping. During the mid-1800s, Old West miners sought their fortune in gold and silver ore here. Remnants of old mines can be spotted from trails winding up the slopes. Located in the Uintah-Wasatch-Cache National Forest, Big Cottonwood Canyon is home to Solitude and Brighton ski resorts. Both have full-service, year-round facilities. From Brighton there are several easy trails leading to various lakes, including Twin Lakes, Lake Mary, Lake Martha, and Dog Lake. The canyon is a protected watershed area and no dogs are permitted. Wilderness areas are located to the north and south.

Porcupine Pub & Grille

A quick and easy nature trail that starts in a park. Good for kids, dogs, and anyone who can do stairs.

An easy, lightly trafficked nature route with beautiful valley and mountain views, a tiny bit of incline to get your heart going, and some lovely, well-maintained trails. The park area also has nice places for picnics or children to play on the playground.

Olympus Hills Park Nature Trail

Wheeler Historic Farm is a unique site that was acquired by Salt Lake County in 1969 and is the only historic site operated by the County. The Junior League worked with the County to preserve the Farm for the centennial in 1976. The same year it was placed on the National Register of Historic Places. County funds, grant monies and support from the Wheeler Farm Friends keeps the farm up and running. The site is about 75 acres in size and includes a swift moving stream (Walker Ditch-Little Cottonwood Creek) that feeds irrigation ditches on the property and supplies water to two ice ponds. Wheeler Historic Farm is a working farm and museum with a generous amount of open space, picnic facilities and a playground for public enjoyment. The Lawns/Pavilion, Activity Barn, Ice House and Party House are rented for private and public events providing a source of earned revenue.
